Great-Aunt Leona's Pumpkin Pie (makes 2 pies)
6 large eggs
1 cup whole milk
1 cup evaporated milk
2 1/2 cups sugar
2 1/2 cups canned pumpkin
2 Tbl. butter, melted
2 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. ginger
1/2 tsp. salt
Preheat oven to 450 degrees F.
In a large bowl, beat eggs. Add whole milk, Pet milk, sugar and canned pumpkin; mix at low speed. Stir in melted butter. Mix spices together in a small bowl then sprinkle into pie mixture and stir.
Pour into two chilled pie shells; bake at 450 degrees for 10 minutes; then 325 degrees for 1 hour.
