Homemade Pumpkin Pie

3/4 cup brown sugar
1/4 cup white sugar
1 Tbsp. molasses
1/4 tsp. salt
1/2 tsp. cinnamon
3/4 tsp. ginger
1/ tsp. nutmeg
1/ tsp. ground cloves
2 cups pumpkin puree (from fresh pumpkin or canned)
3 eggs
1 2/3 cups undiluted evaporated milk
3 Tbsp. sweet dark rum
2 to 3 Tbsp. Crystallized ginger


Prepare 2 pastry shells. Line shells with waxed paper or foil and fill with rice (raw). Bake shells for 10 minutes,then remove paper and rice. Prick shells in several places with a fork. Bake for 10 minutes more.

Set oven temp. at 400° F.

In bowl, combine 2 sugars, molasses, salt,spices andpumpkin. In another bowl, beat eggs with milk and rum. Combine 2 mixtures and mix thoroughly. Sprinkle pastry shells evenly across bottom with crystallized ginger. Ladle the filling into pie shells.

Bake at 400 degrees for 35 to 40 minutes or until knife inserted comes out clean. Makes 2 (9-inch) pies that are delicious. Top with whipped cream.
