1 unbaked 9" pieshell
2 Cups cooked pumpkin (blended smooth)
1/2 Cup (sometimes less) milk
3 eggs (separated)(gently mix yolks)(stiffly beat whites)
1 Cup sugar
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. cloves
1/2 tsp. salt
1 tsp. vanilla
Preheat oven to 450° F.
Blend pumpkin with sugar, spices, milk and beaten egg yolks and vanilla. Fold in stiffly beaten egg whites.
Pour into unbaked pie shell. Bake 10 minutes at 450 then reduce heat to 350 and bake 30-35 minutes longer.
Knife should come out clean. It will have a golden brown surface and will kind of sink and have cracks when cool. After 30-35 minutes turn oven off and open oven door.
Leave in there for another 5-10 minutes, watching the crust.
When cool, pile on the whipped cream and enjoy.
