2 cups pumpkin puree
1 cup solidly packed light brown sugar
1 1/2 cups light cream, or evaporated milk
4 eggs, beaten
1 teaspoon cinnamon
1/2/ teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
Crust for single crust deep pie.
Preheat oven to 450° F. and crimp the edges of pie crust, making a high rim on pie pan.
Pour part of filling in the crust. Place oven rack in the lowest position. Pour mixture into crust, partially filling. Pull out oven rack, place the pie on it and complete the pouring. It will be filled to the top. Carefully push rack back, as filling will be to the top.
Bake at 450° oven for 5 minutes. Lower temperature to 350°F and bake for 1 hour or until a knife comes out clean.
