E. D. Smith's Pumpkin Pie
1-3/4 cups pure pumpkin puree
1 cup packed brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. salt
3/4 cup evaporated milk
1 unbaked 9" homemade or frozen deep dish pie shell
Preheat oven to 425 degrees.
In a medium bow, beat eggs. Add pumpkin, brown sugar, cinnamon, nutmeg, ginger and salt; stir until well combined. Blend in milk. Pour filling into pie shell.
Bake for 15 minutes. Reduce oven temperature to 350 degrees and continue baking 30-35 minutes or until knife inserted in centre comes out clean. Cool.
