Pumpkin Impossible Microwave Pie
16 oz. can of pumpkin
12 oz. can of evaporated milk
1/2 cup sugar
1/4 tsp. ground cloves
1 tsp. cinnamon
2 tsp. vanilla
1/2 tsp. ginger (optional)
Whipped topping for serving.
Spray a 9 inch deep pie plate or a quiche dish with PAM. Place all ingredients in a blender and blend 1 to 2 minutes. Pour into pie plate. Microwave at 50% power for 20 minutes or until center jiggles slightly. Let stand 15 to 20 minutes.
Serve with topping.
I have 750 watt microwave and the 20 minutes was exactly the right amount of time.
For a sugar free pie you can use 18 packets of Equal instead of the sugar.
