Taste of Home's "Homemaker Schools Recipe Collection" Fall 1998 issue
Oatmeal Raisin Cookie Pie
1 cup light corn syrup
3 eggs
1/2 cup packed brown sugar
3 Tblsp. butter or margarine, melted
3/4 cup quick-cooking oats
3/4 cup raisins
1 Tblsp. all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. salt
1 Ready-Made Graham cracker pie crust (9-inch)
Whipped cream or ice cream
Preheat oven to 325° F.
In a large mixing bowl, beat syrup, eggs, sugar, and butter. Add oats, raisins, flour, cinnamon, and salt; mix well.
Pour into crust. Place pie on baking sheet.
Bake at 325 degrees F. for 45-50 minutes or until top is golden brown and filling is just set in center. Cool.
Serve with whipped cream or ice cream.
Yield: 8 servings.
