Serious Pecan Pie

Prepared in: K4287--Nesco 12-Qt. Roastaire Oven
Makes one 9-inch pie.

1 (9-inch) pie shell, partially baked
1/3 cup butter, melted
2/3 cup packed brown sugar
3 large eggs
1 cup dark corn syrup
1-1/4 cups broken or chopped pecans
1-2 tablespoons dark rum
1/2 teaspoon salt


Preheat the oven to 450 degrees.

Bake the empty pie shell about 8 minutes. Allow it to cool while preparing the filling. Reduce the oven temp to 375 degrees.

In a mixing bowl, cream the butter and brown sugar. Beat in the eggs, one at a time, until smooth. Stir in the corn syrup, pecans, rum and salt. Blend thoroughly.

Pour the mixture into the pie shell. Bake for 40-45 minutes, or until a knife inserted into the filling comes out clean. Serve warm with vanilla ice cream.
