Patty Pan Squash Pie

2 c. grated Patty Pan squash
4 eggs
2/3 c. sugar
1/2 tsp. salt
2 2/3 c. scalding hot milk
1 tsp. vanilla

Place grated squash on paper toweling to absorb excess water.

In a bowl, beat the eggs slightly, then beat in the sugar, salt, milk and vanilla. Add the squash and stir. Pour into a pastry lined pan.

Bake in 425 degrees oven for 15 minutes, then 350 degrees oven for 25 minutes.
