Strawberry Ice Cream Pie

3 Ounces Strawberry JelloŽ
1 1/4 Cups Boiling Liquid
1 Pint Strawberry Ice Cream
10 Ounces Frozen Strawberries -- sliced
1 (8" Or 9") Pie Shell

Thaw and drain strawberries; reserve liquid. Pour liquid into a measuring cup and add enough water to make 1 1/4 cups.

Heat to a boil. Remove from heat and add Jello and stir until dissolved.

Cut ice cream into about 6 pieces and add to Jello mixture, stirring until ice cream melts. Chill until mixture is thickened, but not set, about 45 minutes to 1 hour. Fold berries into mixture and turn into baked, cooled pie shell.

Chill until firm, about 40 minutes. Garnish with whipped cream and fruit, if desired. Pie may be frozen, and then thawed before serving. If freezing, do not garnish until ready to serve.

Can be done with any combination of fruits and Jello. Peaches with peach Jello, Raspberries with raspberry Jello, etc. Also good with Lemon Jello and 1 cup boiling water and 1 (6 oz) can frozen lemonade.
