Strawberry Glace Pie

3 (10 oz) boxes strawberries, thawed
1 cup sugar
3 Tablespoons cornstarch
1 baked pie shell


Mash 1 box of thawed strawberries and mix with sugar and cornstarch in a saucepan. Cook until juice has thickened and turns clear. Cool.

Pile other berries into shell, mounding in the center, and cover with cooked berries.



Strawberry Cream Pie

9 inch pie shell, baked
3 tablespoons heavy cream
8 ounces cream cheese
1 quart strawberries
3/4 cup sugar
2 tablespoons cornstarch
pineapple juice
whipped cream


Prepare pie shell. In small bowl, blend cream and cream cheese. Spread mix in the baked shell. Chill.

Slice half the strawberries, using largest berries. Set aside. Put remaining strawberries in mixing bowl; mash with fork. Stir in sugar, let stand for 10 minutes.

Blend berries in processor until pureed. Stir in cornstarch; add sufficient pineapple juice to total 1 and 1/2 cups.

Pour into saucepan; cook over medium heat, stirring constantly, until thickened and clear. Cool.

Pour half the strawberry mixture over the cheese in pie shell; top with sliced strawberries.

Pour remaining strawberry mixture over the sliced strawberries. Refrigerate. Just before serving, top with whipped cream.



Strawberry Cream Cheese Pie
4 1/2 cups strawberries (1/2 cup to be used in glaze)
1 baked pie shell
8 ounces cream cheese
2 tablespoons sugar
milk


Mix cream cheese and sugar. Soften with a little milk. Put into pie shell. Arrange 4 cups strawberries on cream cheese. At this point you can glaze or cover with whipped cream.

Strawberry Glace
1/2 cup crushed strawberries and juice
1/4 cup apricot juice or nectar
1 1/2 Tbls. cornstarch
2 Tbls. sugar
few drops of red food coloring, if desired


Mix the juices with the cornstarch and sugar. Cook over low heat, stirring constantly until liquid is thick and clear. Add coloring. Cool slightly and pour over the berries.



Strawberry Pie

1 9-inch baked pie shell
3 cups whole or sliced strawberries
1 cup sugar
3 tablespoons cornstarch
1/4 tea. salt
3/4 cup fruit juice (apricot nectar or peach nectar)
1 tea. lemon juice
few drops red food coloring, if desired


Combine sugar, cornstarch, salt, fruit juice, lemon juice and food coloring in a saucepan. Cook slowly until thick and clear.

Cool. Place berries in pie shell and pour sauce over all. Chill. Serve with a dollop of whipped cream.

Variation; A vanilla or coconut pudding placed on the bottom of the pie shell will give you a strawberry cream pie.



Heavenly Strawberry Cream Pie

1 graham cracker crust/pastry shell
1 pkg. cream cheese (large)
1 pkg. frozen strawberries
few drops red food coloring
2 tsp. powdered sugar
1 c. powdered sugar
3 tsp. cornstarch
1/2 pt. whipped cream


Cream cream cheese and powdered sugar with mixer until smooth; place in graham cracker crust.

Meanwhile, place thawed strawberries in small pan, combined with cornstarch. Add red food coloring (optional) and thicken.

Place in refrigerator until cool. Place over cream cheese mixture.

Beat whipped cream until thick. Add powdered sugar, place over cooled strawberries.

Let stand in refrigerator for at least an hour.
Makes 1 (9-inch) pie.
