Mama Dip's Sweet Potato Pie
From Chef Mildred Council (Mama Dip)
A Scrumptious Addition to Thanksgiving Dinner.
1 1/2 pounds sweet potatoes (yams)
1 stick soft butter or margarine
2 cups sugar
3 eggs, beaten
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 ground cloves
1 teaspoon vanilla
1/2 cup milk
pinch of salt
Wash yams and cover with water. Bring to a boil. When soft (about 45 minutes), drain and cool. Peel potatoes and mash in a large bowl with margarine and sugar, mix well. Add eggs. Mix well stirring in spices and milk. Pour into 10 inch unbaked pie shell. Bake in preheated oven at 375 degrees, or until center is firm.
