Sweet Potato Pie

2 cups (about 4 medium) cooked, mashed sweet potatoes
3 eggs
1 cup packed brown sugar
1 tsp. salt
1 cup evaporated milk or light cream
1 unbaked 9 inch pie shell
pecans for garnish
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/8 tsp. ground cloves

Preheat to 350. Cook sweet potatoes by baking at 350 for 40 minutes or boil in water to cover for 20 minutes, or until soft. Cool, peel and mash until smooth.

Combine eggs, sugar, salt and spices in a large bowl and mix well. Add mashed sweet potatoes and evaporated milk; mix well. Pour into unbaked pie shell. Bake for 1 hour and 15 minutes or until a knife inserted in the center comes out clean.

Garnish with pecans and serve with whipped cream or ice cream, if desired.

posted by ROY 11-15-102 7:47 AM Streusel Topping 1/4 c firmly packed brown sugar 1/2 tsp cinnamon 2 Tbsp flour 2 Tbsp. cold Butter 1/2 c chopped pecans Combine sugar, flour and cinnamon; cut in butter until crumbly. Stir in pecans.
