Vegetable: Pizza Margharita

Pizza Margharita (Grilled Tomato Pizza)

1 pizza dough
1 cup olive oil
2 cloves garlic
2 oz. heirloom tomatoes
1 1/2 oz. Fontina cheese
1/2 oz. Parmesan cheese
6-8 basil leaves
1 oven dried tomato (optional)
Salt & pepper


Heat olive oil and garlic in a saucepan. Let cool, then spread over pizza dough. You can use any frozen pizza dough or a mix available in grocery stores. Season dough with salt and pepper.

Place dough on a hot grill. Cook 3-5 minutes. The crust will start to bubble. The bubble should deflate after you take the crust off the grill.

Cover the warm crust with grated Fontina cheese. Season with salt and pepper. Add sliced heirloom tomatoes (red, yellow and green.) Return to the grill, but lower the heat and put the crust on the top rack of the grill. Cook a couple of minutes until the cheese has melted.

Finish with grated Parmesan cheese and basil leaves. You can also add tomato slices that have been dried in the oven. Serves 2.
