Zucchini Pie
1 1/2 cups peeled seeded shredded zucchini
1 1/2 cups sugar
1 egg
3 Tbl. flour
1 1/2 cups evaporated milk
2 1/4 tsp. butter/marg
1 tsp vanilla
cinnamon and/or nutmeg to taste
Preheat oven to 425° F.
Mix all in a blender till smooth and pour into a 9" unbaked pie shell.
Sprinkle with cinnamon and/or nutmeg.
Bake 10 minutes at 425*, then 20 minutes at 300*.
It 's done when knife inserted in middle comes out clean.
