Combination: Rae's Famous Pizza

“RFP” (Rae’s Famous Pizza)
(From start to finish this awesome pizza takes about 1-1/2 hours)

Pizza Dough:
(Food Processor)~ In processor blend 3 Cups of flour and 1 tsp. salt.

Dissolve 1-T. yeast and 1 tsp. sugar in 1 1/4 C. warm water to dissolve yeast, allowing 15 minutes for the yeast and water to work together.

Mix down (do this with a whisk) and add 1 T. olive oil and 1 T. vegetable oil. Whirl that whisk.
With processor going running slowly, add yeast mixture through the tube, and pulse until ball forms. Not long but enough to incorporate the flour. Do not over process!! Take dough out of processor and put on floured (lightly floured) counter.

Knead on floured counter for a few minutes. Cut in half and let equal parts rest for 15 minutes.

Roll out and fit into 2 greased (PAM) pizza pans. Let rise 10 minutes.

Add toppings:
Dried sweet basil all over crust, thinly or however you want it to taste.
Over top of the basil, oodles of old sharp grated cheddar.
Thinly sliced tomatoes over the cheese to cover all of the pizza.
Then the sliced deli meats, capicolli, salami, pepperoni, regular ham, divided evenly over pizza.
Fresh veggies: green pepper diced, onions, mushrooms, etc.
Dried oregano, sprinkled over
More cheddar, add some parmesan and feta sprinkles
Finally, shredded mozzarella.


Bake for 20~25 minutes at 400 (watch closely), turn pizza pan around in oven and bake for another 15 minutes @350. Serve with salad to reduce the consumption of all who are eating this pizza by giving them some greens to counteract the high fat.
