Parmesan Thin Crust Pizza Dough

1 tsp active dry yeast
2 c bread flour
1/4 tsp salt
1/2 c. freshly grated Parmesan cheese
1 T olive oil
2/3 c. lukewarm water


Put ingredients in bread machine in the order suggested by your bread machine manufacturer and set to dough cycle.

Remove dough from machine to floured work surface. Cut into 2 pieces for 2 pizzas. Roll out into circles. Stretch as far as you can make them go without making holes. Place on greased pizza pans or on cookie sheets.

Preheat oven to 500 degrees F. When hot, place pizza in oven and bake for 10 minutes or so.

Remove and top quickly with favorite toppings. Finish baking, at least 10-15 minutes until dough is crispy and brown and cheese is bubbly.

Makes 1 large or 2 small pizzas
