Pizza Dough

2 teaspoons instant dry yeast or bread machine yeast
1 1/4 cups warm water
2 teaspoons sugar
1 1/4 teaspoons salt
2 tablespoons olive oil, plus extra for skillets
1 tablespoon corn meal
1 cup all purpose flour
2 cups bread flour


In large bowl of electric mixer, whisk together yeast, warm water and sugaar. Let stand about 5 minutes for yeast to dissolve. Whisk in salt, 2 T. olive oil, corn meal, and almost all flour, except about 1/2 cup.

Turn out onto lightly floured work surface. Knead 8 to 10 minutes, adding additional flour as needed to make a soft, supple dough. Cover and let rest 30 minutes.

Punch dough down, allow to rest 8-15 minutes, then shape into three 9 inch rounds.

Place dough rounds in cast iron skillets that have been coated with olive oil and sprinkled with seasoned bread crumbs.

Top dough as desired, and grill 8 to 15 minutes.
Oven baking: I baked at 400 degrees until pizzas looked done, dough was browned and toppings were warm.
