Dough: Pizza Dough by Polar Bear

2 cloves garlic, minced
3 cups bread flour (15 oz)
1/4 cup semolina or corn meal
1 tsp. Salt
2 tbsp. Olive oil
1/2 package yeast (about 1 tsp)
1/4 tsp. Sugar
1/4 cup warm water
3/4 cup cool water


Mince garlic in food processor (no more or the dough won't rise). Add bread flour, semolina (or corn meal), salt and olive oil. Proof yeast with sugar in warm water; stir in cool water; drizzle into flour with processor running; knead one minute. Let rise covered 1 hour (or 8 to 24 hours chilled). Recipe can doubled, freezing half for another day.

This recipe makes enough dough for a thick crust 13 inch pizza. For a thin crust, prepare only a half batch (or freeze half). Or you can scale down the recipe by 1/3 (2 c flour, etc.) and roll for a 16 inch round or 12 by 17 inch jelly roll pan.
