Maui Paradise Pizza
1 (10 oz.) can all ready pizza crust
1/4 cup chopped macadamia nuts
Topping:
8 oz. fresh or frozen shelled deveined cooked small shrimp, thawed
1 Tbl. fresh lime juice
1 tsp. finely chopped serrano or jalepeno chilie
1/4 tsp. salt
1/4 tsp. white pepper
1/2 cup chopped peeled mango
1/2 cup chopped red bell pepper
1/2 cup chopped peeled kiwi
1/2 cup drained canned pineapple tidbits
1/2 cup thinly sliced green onions
1/2 cup chopped red onion
1/3 cup fresh cilantro
1 (8 oz.) pkg cream cheese softened
6 red bell pepper rings
Heat oven to 425. Grease 12 inch round pizza pan. Unroll dough placed
on greased pan and starting at center press out to 12 inches making sure
to leave an edge to the crust.
Sprinkle edges with macadamia nuts and press in slightly. Bake at 425
for 8 to 12 minutes or until golden brown. Cool 10 to 15 minutes.
Meanwhile in large bowl, combine shrimp, lime juice, chilie, salt and
pepper, mix well. Let stand to marinate while chopping veggies.
Add mango's, kiwi, chopped bell pepper, pineapple, green onios, red
onion and chopped cilantro. Mix well.
Spread cream cheese evenly over the cooled crust. Spoon shrimp mixture
over cream cheese, press lightly. Garnish with pepper rings.
