Quick Rise Pizza Dough

3 cups all purpose flour
2 pkgs. fast rising yeast
1 tsp. salt
1 cup + 3 tbsp. milk at room temp
cornmeal for pan


Put flour, yeast and salt in a food processor fitted with a metal blade and pulse 2 to 3 times to mix. With machine running, pour milk through feed tube and process dough 90 sec, (it should feel stringy when pulled).

Oil a mixing bowl and place dough in it turning to coat all sides. Cover bowl with plastic wrap and a towel and place in a warm place until dough has doubled in bulk, about 30 minutes.

Preheat oven to 500° F.

Punch dough down, turn it out onto a lightly floured board and knead 1 min. lightly coat pizza pan with vegetable oil and sprinkle with cornmeal. Roll or stretch dough to fit pan. Top with desired ingredients and bake at 500 F about 10 minutes. Makes 2 (10") crusts or 1 (15") crust.
