Neopolitan Style Pizza Dough

1 tsp. active dry yeast
1 1/4 cup warm water (105 to 115 degrees)
1 cup cake flour (not self rising)
2 1/2 cups all purpose flour
2 tsp. salt
Olive oil for the bowl


Sprinkle the yeast over water and let stand 1 minute or until the yeast is creamy. Stir until the yeast dissolves.

In a lagre bowl, combine cake flour, all purpose flour, and salt. Add yeast mixture and stir or mix until a soft dough forms. Turn dough out onto a lightly floured surface and knead, adding up to 1/2 cup flour if necessary, until smooth and elastic, about 10 minutes.

Lightly coat a large bowl with oil. Place the dough in bowl, turning it to oil top. Cover with plastic wrap and let rest in a warm place until doubled in size, about 90 minutes.

Flatten dough with fist and cut into desired amount of pieces (4 to 6) and shape into balls. Place on a floured surface and cover with plastic wrap, allowing room for dough to expand. Let sit until doubled in size, 60 to 90 minutes.
