Pizza with Roasted Garlic, Onions, Artichokes, Tomatoes and Two Cheeses
1 large head garlic, unpeeled
2 tsp. olive oil
1 prepared pizza crust
2 Cups Mozarella, grated
1/2 Cup roasted red bell peppers, cut in 1/2 inch strips
2/3 Cup feta cheese
1/2 red onion, sliced thinly
4 artichoke hearts( not in oil)
4 tbsp. chopped fresh basil
Preheat oven to 350 degrees. Chop off top of garlic. Place in ovenproof
dish and drizzle with oil. Bake until garlic is soft, about 45 mins.
Soak sun dried tomatoes for about 5 minutes in boiling water. Drain
Squeeze out cloves into food processor. Add tomatoes. Using on/off turns,
process until smooth, adding olive oil when needed to form paste.
Preheat oven to 450 degrees. Place crust on baking sheet. Spread garlic
paste over. Top with mozzarella, onion slices, tomato slices, artichoke
heats and feta cheese. Sprinkle with basil.
Bake for about 8-10 minutes and wait five before cutting. Sprinkle with
any remaining basil
