Pizza with Onions and Olives

6 tbsp. olive oil, divided
4 medium onions, finely sliced
salt and freshly ground black pepper
1 3/4 cup mozzarella cheese, cut into small dice sized pieces
32 black olives, pitted and halved
3 tbsp. chopped fresh parsley
one unbaked pizza crust


Allow oven to preheat to 475° while preparing pizza.

In a large frying pan, heat half of the olive oil. Add the onions and cook over low heat for about 12 to 15 minutes, until they become soft and translucent, and just begin to brown. Season to taste with the salt and pepper and remove from heat.

Spread the pizza crust on a pan and top with the onions, spreading them evenly over the crust. Top with the mozzarella cubes, spreading them evenly around. Top with the olive halves. Sprinkle the parsley over the top and then the olive oil.

Immediately bake for 15 to 20 minutes or until the crust is golden brown and the cheese is bubbling.
