Spinach and Caramelized Onion Pizza

Buy creamed spinach, not spinach in butter sauce. To lower fat, use Green Giant boil-in-bag creamed spinach. Other brands are higher in fat.

Cooking spray
1 large onion, thinly sliced and separated into rings
2 Tbl. water
1 Tbl. balsamic vinegar
2 (10-ounce) pkgs. frozen creamed spinach, thawed (such as Green Giant)
1 (10-ounce) pkg. thin Italian cheese-flavored pizza crust (such as Boboli)
3/4 cup (3 ounces) crumbled feta cheese with garlic and herbs


Preheat oven to 450 F.

Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion; saute 4 minutes or until crisp-tender. Reduce heat to medium; saute 10 minutes or until golden brown, adding water, 1 Tbl. at a time, during last 3 minutes. Remove from heat; stir in balsamic vinegar.

Spread spinach evenly over pizza crust; top with onion mixture and cheese. Bake at 450 F for 10 minutes or until crust is crisp and topping is thoroughly heated.

Yield: 5 servings. Serving size: 1 slice

Note: If Green Giant creamed spinach is not available, use the following substitution: Combine 2-1/4 tsp. cornstarch and 1/2 cup fat-free nondairy creamer (such as Cremora) in a 2-cup glass measure; stir until blended. Add 1 Tbl. margarine, 1/4 tsp. butter extract, and 1/8 tsp. each of onion powder, garlic powder, salt and sugar; stir well.

Microwave at high 1-1/2 minutes or until thick, stirring every 30 seconds. Stir cream sauce into 2 (10-ounce) pkgs. frozen chopped spinach, thawed, drained, and squeezed dry. Spread spinach mixture over cheese-flavored pizza crust as directed.
