2 pita or pocket breads
2 tablespoons oil
1 1/2 cups chopped onions
1 cup chopped mushrooms
1/2 pound Polish sausage -- sliced
1 1/2 cups chopped tomatoes -- drained
1 teaspoon oregano
2 cups grated Mozzarella cheese
1 tablespoon fresh basil -- chopped


Preheat oven to 375° F.

Use a sharp pointed knife to separate the two layers of pita bread to make two matching rounds.

Heat 2 tbsp. of the oil in a skillet and add the onions, mushrooms, and sausage slices. Cook, stirring occasionally, until onions are translucent, mushrooms tender and sausage slightly browned. Stir in the tomatoes and oregano, and simmer about 3 minutes.

Put the pita rounds on a cookie sheet, smooth-side down, and spread the tomato-sausage mixture evenly over each piece.

Cover the sauce with cheese and a few sprinklings of basil. Drizzle with about 1 tbsp. of oil. Bake at 375 F. for 12 -15 minutes.
