Pyrogies (Ukrainian Varenyky)
4 cups flour
2 teaspoons salt
2 eggs, well-beaten
2 tablespoons olive oil
1 cup water
Combine flour and salt, then add other ingredients. Knead until smooth and elastic. Cover and let stand at least 15 minutes. Roll out thin on a floured board, then cut out in rounds using a glass or a beer mug.
Sauerkraut filling (Kapusta):
2 cups sauerkraut
1/2 cup onion, chopped
4 tablespoons vegetable oil
Pepper to taste
Boil sauerkraut in some water. Rinse and cool. Drain and squeeze out water. Chop finer if you want. Sauté onions in oil, then add to sauerkraut. Season to taste.
Assemble pyrogies:
Add 1 tablespoon of filling to each round of dough. Fold dough over filling and pinch edges together well. Boil a pot of water, with a little salt and oil to keep them from sticking together. Add pyrogies to pot. When done, they’ll float to the surface.
