Polish Dill Pickle Soup

6 cups beef broth
2 tablespoons instant flour (such as Wondraź)
1 cup milk or cream
1 egg yolk
2 tablespoons butter
4 large dill pickles, stems removed, shredded
2/3 cup liquid from pickle jar
2 1/2 cups boiled, diced potatoes
Pepper to taste
Shredded carrots, optional

In a large soup pot, bring beef broth to a boil.

In a small bowl, mix flour with milk (or cream), then add to beef broth.

Bring to a boil for 2 minutes; remove from heat.

Whisk in egg yolk and butter.

Add pickles, pickle liquid and potatoes.

Heat through, but do not boil.

Remove from heat, garnish with shedded carrots, and serve. Serves 10.
