Cuban Chicken Adobo

3 cloves garlic, coarsely chopped
1/4 cup minced onion
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 1/2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh parsley
3 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
Plenty of salt and freshly ground black pepper
2 large, whole, boneless, skinless chicken breasts, split in half (4 halves total), washed and blotted dry


Prepare the marinade by pureeing the garlic, onion, cumin, oregano, thyme, cilantro, parsley, lime juice, oil and salt and pepper to taste in a blender or food processor.

Transfer the marinade to a non-reactive baking dish(ceramic or glass) and add the chicken breasts, turning to coat with the marinade.

Cover the dish and marinate in the refrigerator for 30 minutes to 1 hour. Turn the chicken once or twice during that time.

Grill the breasts over medium heat until just cooked, about 5 to 6 minutes per side.

Yield: 4 servings.
