Best Beer Batter Chicken

6 to 8 boneless chicken
breasts (fish fillets are also fantastic!)

Batter:
1 cup flour
1 (10 oz.) can beer
1 tsp. baking soda
salt to taste
oil for frying


Cut boneless chicken breasts in half and pound with mallet to make as flat as possible and tenderize. (If you are in a huge hurry, you may omit this step.) Dry breasts and dust with flour.

In a large bowl, combine flour, beer, baking soda and salt. Beat until batter is smooth. Immerse chicken breasts in batter. Fry in deep, hot oil until browned and tender. Drain on paper towels. Chicken breasts may be frozen.

Serve with a variety of sauces such as a sauce of honey and lemon juice (warmed), soy sauce, mustard sauce or duck sauce.

Serves 6.
