Buttermilk Chicken

1 cut-up chicken
1 1/2 cups buttermilk
1 1/4 cups flour
2 Tbsp. chopped parsley
1 tsp. salt
1/2 tsp. pepper
1/4 cup shortening
1/4 cup butter


Place chicken in a bowl; pour buttermilk over, and marinate for 1 hour. In a separate bowl, mix flour, parsley, salt and pepper. Melt shortening and butter over medium-high heat. Coat each piece of chicken with flour and brown 4 to 5 minutes.

Preheat oven to 375 degrees F.

Place chicken in a buttered casserole dish. Drain oil, place scrapings on chicken. Pour half of leftover buttermilk on chicken. Bake 1 hour at 375 F, uncovered, until crispy.

To make gravy, dissolve 2 Tbl. flour in leftover buttermilk; add to pan drippings. Stir until it begins to thicken. Add more buttermilk, stirring constantly, until you reach the desired consistency. Let simmer for about a minute, stir well, and serve the gravy over the chicken.
