Easy Chicken Cacciatore:

1 lb. boneless, skinless breasts
salt and pepper
8 ounces fresh mushrooms
2 garlic cloves
olive oil
1 (14 - 16 0z) can of Italian-style stewed tomatoes


Cut each breast into 1/2, and then crosswise in 1/2.

Season with salt and pepper.

Slice or quarter the mushrooms and chop the garlic.

Heat 1-2 tablespoons oil in large frying pan, add chicken and cook over med-hi heat, turning, till lightly browned (1-2 mins, per side). Remove to platter and leave drippings in pan.

Heat another 1-2 tablespoons oil. Add mushrooms and cook, stirring, till lightly browned.

Add garlic and stir for 1 min.

Stir in tomatoes and their juice, return chicken and accumulated juices to pan, cover and simmer over low heat till chicken is cooked through (4-5 min).

Serve with fettuccine tossed with olive oil, scallions and grated Parmesan cheese; a tossed green salad and garlic bread.
