Chicken Cacciatore for Crock Pot

1 large onion, thinly sliced
8 to 10 skinless boneless chicken breasts
2 cans (6 oz. each) tomato paste
1 can (28 oz.) diced tomatoes, do not drain
1/2 cup each diced green pepper and celery
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. minced garlic (2 large cloves)
1 tsp. dried oregano leaves
1 tsp. dried basil leaves
1/2 tsp. celery seed


Saute onion in a bit of oil until lightly golden.

In a medium bowl, combine all ingredients except chicken, and stir until well blended.

Place a single layer of meat on bottom of crock-pot, coat with a bit of sauce; place any additional chicken pieces between layers of sauce. Pour any remaining sauce over the meat.

Cover; cook for 7 hours on Low or 3 hours on High.

This recipe makes lots of sauce, so you could easily put in 2 or 3 more chicken breasts

Serve with hot spaghetti coated with some sauce (additional sauce can be served in a bowl) and a Ceasar salad
