Chicken Cacciatore

4 1/2 cups of water
1 clove garlic, finely chopped
1 medium green pepper cut into 1/2 inch pieces
1 medium onion, chopped
1 cup uncooked orzo ( pasta section of grocery store)
1 can (28 ounces) whole tomatoes, in puree
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
1 pound boneless, skinned chicken breasts, cut into 1 inch chunks
1/2 cup pitted black olives, chopped
1/2 cup grated Parmesan cheese


Bring 4 cups water to boiling in large skillet.

Add garlic, green pepper, onion, and orzo; cook over medium-high heat, stirring occasionally, for 10 minutes.

Drain; return orzo mixture to skillet.

Add tomatoes, oregano, basil, salt, pepper, and remaining 1/2 cup of water to skillet, breaking up tomatoes with wooden spoon. Bring to simmering.

Add chicken, olives and 1/4 cup of Parmesan cheese to skillet cover and simmer, stirring occasionally, over medium heat for 10 minutes or until chicken is no longer pink in center.

Serve immediately, sprinkling with remaining Parmesan.
