Arroz con Pollo

1 cut up frying chicken
4 Tbsp. butter
1 pkg. chicken Rice-A-Roni *
2 Tbsp. butter
2 c. hot water
1 can stewed tomatoes *
1/2 tsp. salt


Brown chicken in 4 tablespoons butter; set aside.

Brown 1 pack chicken Rice-A-Roni in 2 tablespoons butter. Remove to 3 quart casserole. Stir in 2 cups hot water, contents of chicken flavor packet, 1 can stewed tomatoes and salt. Arrange browned chicken on top. Cover and bake at 375 degrees for 35 to 40 minutes. Uncover last 10 minutes.
