Chicken: Chicken Parmesan by Ann Sanders

Chicken Parmesan
4 servings Prep time: 30 minutes

2 boneless, skinless chicken breast halves, split
2 eggs beaten
1/2 cup Italian-seasoned bread crumbs
2 tablespoons olive oil
1 jar (26 oz.) marinara sauce
1/2 cup chicken broth
1 cup grated mozzarella cheese
1/3 cup grated Parmesan cheese
Cooked angel hair pasta


Flatten chicken breasts to 1/4 inch thick. Season with salt and pepper. Dip into eggs. Dredge chicken in bread crumbs. Saute chicken in olive oil in a large skillet coated with nonstick cooking spray. Cook over med-high heat until lightly browned, about 2-5 minutes per side.

Combine the marinara and broth then pour over chicken. Bring to a boil, cover, and reduce heat to low. Simmer 5 minutes; turn chicken. Sprinkle chicken with both the cheeses. Cover and simmer 5 minutes, or until cheese is melted, serve with cooked pasta.
