Chicken Chow Mein

Chicken Chow Mein

1/4 c. chopped onion 
1 can (4 oz.) mushroom stems and pieces, reserve liquid 
2 Tbsp. butter or margarine 
2 c. diagonally sliced celery 
1 can bean sprouts, drained 
3 Tbsp. soy sauce 
1 Tbsp. sugar 
1/2 tsp. salt 
2 Tbsp. cornstarch 
3 Tbsp. mushroom liquid 
1 1/2 c. cut up chicken or turkey
chow mein noodles 


Saute onions and mushrooms in butter in large skillet until onions are tender.

Add water or chicken broth to mushroom liquid (less the 3 tablespoons) to measure 1 1/2 cups.

Stir into onion-mushroom mixture. Add celery, bean sprouts, 
soy sauce, sugar and salt. 

Heat to boiling. Reduce heat and simmer, uncovered, for 15 minutes.

Blend cornstarch in 3 tablespoons mushroom liquid; add to vegetables.

Cook, stirring conatantly, until mixture thickens.  Add chicken and heat thoroughly.
 
Serve over hot chow mein noodles. Serves 4.
