Chicken: Cider Glazed Chicken

Cider Glazed Chicken

1 (8 oz.) chicken breast
2 Tbl. butter
1 shallot
2 oz. diced pancetta
1 thin sliced onion
4 cups apple cider
1 cinnamon stick
2 Granny Smith apples


Melt 1 Tbl. butter in a saute pan. Add chicken breast. Cook 2-3 minutes until brown. Add 1 roughly chopped shallot to pan. Add 1 more Tbl. of butter, then place pan in a 350 degree oven for 2-3 minutes.

While the chicken is cooking, bring apple cider and cinnamon stick to a boil. Cook until reduced by half. Remove chicken from oven and baste with apple cider.

In a separate pan, saute pancetta until brown. You can substitute bacon for the pancetta. Add julienned onion and cook until the onion is translucent. Add the julienned apples and remove from heat.

Serve the apples, onion and pancetta mix topped with chicken. Serves 1.
