Chicken Cordon Bleu  

8 boneless breast halves 
8 slices good quality deli ham  
8 slices Jarlsburg Swiss 
2 eggs 
1 1/2 c. seasoned bread crumbs 
1/2 c. Parmesan 
salt and pepper to taste 
1/2 c. butter 
3/4 c. white wine 
3/4 c. sour cream 
parsley 


Flatten breasts. Place a slice of ham and slice of cheese in each breast. 
Roll up and secure with toothpicks. Dip chicken in egg. Then roll in bread
crumbs and Parmesan that have been combined. Season with salt and pepper. 

Heat butter in skillet and brown breasts. Reduce heat and cook 30 min.  
Remove breasts and keep warm. 

Add wine to drippings to deglaze pan.  

Then add sour cream and parsley (for color) and heat through. 

Serve sauce over chicken and cooked rice. 

Note: you can bake the chicken in a buttered dish and bake at 400° F. for 40 minutes.
