Cranberry Baked Chicken

3 lbs. fryer/broiler chicken
1/4 cup vegetable oil
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup chopped onion
1/4 cup chopped celery
1 cup whole-berry cranberry sauce
1/2 cup ketchup
1 1/2 T. brown sugar
2 T. lemon juice
1 T. Worcestershire sauce
1 T. prepared mustard
1 T. red wine vinegar


Preheat oven to 325° F.

Heat oil in skillet over medium-high heat. Carefully add chicken pieces. Brown evenly on all sides. Remove chicken and drain on a paper towels.

Add celery and onion to drippings in pan and cook until tender, stirring often. Stir in cranberry sauce and remaining ingredients, blend well.

Bring to a boil and remove from heat.

Spray baking pan with cooking spray.

Add chicken pieces and sprinkle with salt and pepper.

Spoon cranberry mixture evenly over chicken.

Bake at 325 degrees for 1 hour, basting about every 15 minutes or so.
