Chicken Croquettes

Chicken Croquettes

2 cups chopped cooked chicken
1 tables. minced or grated onion
1/2 teas. salt
dash of cayenne
1 teas. lemon juice
1 tables. minced parsley
1 cup thick white sauce
1 egg
2 tables. water
1 cup fine bread or cracker crumbs
fat for deep frying Cream sauce (or mushroom sauce or chicken gravy)


Combine chicken, onion, salt, cayenne, lemon juice, parsley and thick white sauce. Chill thoroughly.

Shape into 6 croquettes.

Beat egg with water.

Roll croquettes in crumbs, dip in egg mixture to coat on all sides, and roll again in crumbs.

Fry in deep fat heated to 365 degrees for about 6 minutes, or until well browned. Drain on absorbent paper. Serve with cream sauce.
