Chicken Croquetts

2 cups of cooked diced chicken
1 cup cooked rice
1/2 cup finely chopped celery
2 T. finely chopped onion
1 tsp. flour
3/4 tsp. salt
1 beaten egg
1/3 cup evaporated milk
Italian flavored bread crumbs
oil for frying


Combine chicken, rice, celery, onion, flour and salt.

Stir in egg and milk. Mixture may be extemely moist. Add just enough bread crumbs to hold mixture together.

Shape into approx. 12 croquettes.

Coat with remaining bread crumbs.

Heat oil in a deep-fat fryer to 375 degree. Fry croquettes of 2 to 5 min. or until golden brown. Drain on absorbent paper towel.

Serve with chicken gravy.
