Chicken: Five Cheese Chicken Breasts

5 Cheese Chicken Breasts

4 boneless, skinless chicken breast, pounded flat
4 slices of Swiss cheese
4 slices of mozzarella cheese
4 oz. ricotta cheese
2 tbls. Parmesan cheese
1 egg, beaten
1 cup bread crumbs
1 cup cheddar cheese
1/2 cup milk
1/2 cup chicken broth


Mix ricotta, Parmesan, and egg together in a small bowl. Place 1 slice of Swiss and mozzarella cheese on each flattened chicken breast. Place 2 tsp. of ricotta mixture in center of chicken breast. Roll and close with toothpick.

Cover with breadcrumbs and brown breasts in frying pan. Remove from pan and place in greased baking dish. Bake for 20 minutes at 400 degrees.

On stove, mix together cheddar cheese, milk, and chicken broth. Stir until warm throughout. Cover each chicken breast with sauce before serving.
