Grilled Lemon-Tarragon Chicken

1/2 cup fresh lemon juice (2-3 medium lemons)
2 large cloves garlic -- minced
1 tablespoon fresh flat-leaf parsley leaves -- chopped
1 tablespoon fresh tarragon leaves -- chopped
1 chicken (3-1/2 lbs.) -- cut into 8 pieces
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
2 large lemons -- quartered


In a large nonreactive bowl, combine the lemon juice, garlic, parsley, and tarragon. Add chicken pieces to marinade, cover, and refrigerate at least 30 minutes.

Heat the grill to medium-hot and place grill rack 4-inches above heat source. Rub the chicken pieces with salt and pepper. Grill chicken until the juices run clear - 7 to 10 minutes on each side - basting with the remaining marinade occasionally as the chicken cooks.

During the last 5 minutes of cooking time, place the lemon quarters on grill, if desired.

Serve the grilled lemon wedges with the grilled chicken.

NOTES : ~You can use any fresh herb in place of the parsley and tarragon, if desired.~
