Hawaiian Style Chicken

1 tbsp. vegetable oil
1/3 cup frozen (thawed) orange juice concentrate
1 egg, slightly beaten
1/3 cup all-purpose flour
1 tsp. ground ginger
1 tsp. salt
2 1/2 to 3 lb. broiler-fryer chicken, cut up
2 cups shredded coconut
2 tbsp. margarine or butter, melted


Preheat oven to 375 degrees F.

Spread oil on bottom of rectangular pan, 13x9x2 inches.

Mix orange juice concentrate and egg; reserve. Mix flour, ginger and salt.

Coat chicken with flour mixture. Dip chicken into orange juice mixture, then coat with coconut.

Place chicken, skin sides up, in pan. Drizzle with margarine or butter. Bake uncovered in oven until thickest pieces are done, about 60-70 minutes. If necessary, cover lightly with aluminum foil during last 15 minutes of baking to prevent excessive browning.
