Lemon Herbed Chicken


3/4 cup QuakerŽ Oat Bran hot cereal, uncooked
2 tsp lemon juice
1/2 tsp garlic powder
1 tbsp) water
1/4 tsp pepper 6 boneless chicken breasts
1/2 tsp salt
1/4 cup snipped fresh
parsley OR (1 1/2 tsp) dried parsley flakes
1 egg white, lightly beaten


QuakerŽ Oat Bran can be used to replace all of the flour, cracked crumbs, croutons, crushed cereal or bread crumbs in your favourite chicken, fish, or vegetable coating.

Instructions:
Heat oven to 180°C (350°F).

In a shallow dish, combine QuakerŽ Oat Bran, garlic powder, pepper, parsley, and salt; mix well.

In another shallow dish lightly beat egg white and water together.

Dip chicken into egg mixture, then coat with oat bran mixture.

Place coated chicken pieces on a broiling pan. Sprinkle lemon juice evenly over chicken pieces.

Bake 50-55 minutes or until chicken is tender and coating is lightly browned.

Remove chicken to serving platter. Squeeze lemon wedge over chicken before serving, if desired.

Yield: 6 servings.
