Crunchy Garlic Baked Chicken

2 tbsp olive oil
2 tbsp 2% low-fat milk
1/2 tsp kosher salt
1 tsp garlic powder
1 tbsp Penzey's Foxpoint Seasoning

Coating:
2 cups corn flake crumbs -- * see note
1/2 tsp paprika
salt and pepper

Chicken:
4 boneless skinless chicken breast halves
2 tbsp extra-virgin olive oil


Preheat oven to 425 degrees F. Spray a 13x9" baking pan with cooking spray.

Mix 2 tbsp oil, milk, Foxpoint Seasoning, salt and garlic powder. In separate
shallow pan, mix together the corn flake crumbs, paprika and salt and pepper.
Dip chicken into milk mixture then coat with cereal mixture. Place in prepared
pan. Drizzle with 2 tbsp olive oil.

Bake, uncovered, for 25 minutes. Chicken should no longer be pink inside when
thickest parts are cut into.

NOTES : If you are low carb or Somersizing, substitute pork rind flour for the corn
flake crumbs. To make pork rind flour, place some pork rinds (flavorless) into
a clean coffee grinder (or small food processor). Make sure the coffee grinder
is not used for coffee, but for spices, and wipe out well and dry well before
using. Grind a small amount at a time, otherwise it gets clogged up and doesn't
work. Once the amount is ground, remove it to a bowl and keep doing with remaining
pork rinds. I usually make a big batch and keep them frozen in a large zip-type
baggie.

Baked "Fried" Chicken

2 tbsp unsalted butter
2 tbsp olive oil
3/4 cup corn flake crumbs
2 tbsp Mrs. Dash Tomato Basil Garlic
1 tsp garlic powder
1 tsp salt
1/4 tsp black pepper
4 pc chicken (bone-in)
Melt butter. Add oil and mix well.


Wash chicken well and pat dry. Brush butter/oil mixture all over chicken. Preheat oven to 375°F.

Place crumbs, Mrs. Dash, garlic powder, salt and pepper in a shallow pie pan.
Mix well. Dredge chicken in crumb mixture. Spray casserole dish with cooking spray. Spray tops of chicken with spray too. Place chicken in casserole dish.

Bake at 375°F for 1 hour. Check doneness. If still a bit pink, or you still see blood, cook for a bit longer until no longer pink and juicy inside.

Serve with rice pilaf and a salad.
