Pecan Chicken and Raspberry Sauce

4 skinless-boneless chicken breast, sliced in half
2/3 cup chopped pecans
1 egg -- beaten
2 Tablespoons milk beaten with egg
1/2 cup bread crumbs
salt and pepper
1 teaspoon creole seasoning (optional)


Dip chicken in egg wash then into the crumb mixture. Fry in 2 Tbl. of butter and 1/4 veg. oil.
Drain on paper towel.


Raspberry Sauce

1(12-ounce) bag of frozen raspberries
1/4 cup sugar
1/2 cup water
1/2 cup raspberry jam

Combine all ingredients in sauce pan. Simmer over medium heat for approximately 20-30 minutes, stirring occasionally.

This sauce maybe stored in the refrigerator.
