Asian Noodle and Chicken Salad

8 ounces Japanese udon noodles or linguine
2 cups diced cooked chicken
3/4 cup slivered red bell pepper -- 1/2" in length
1/3 cup slivered green onions
3 tablespoons chopped fresh cilantro
3 tablespoons chopped fresh mint
2 tablespoons toasted sesame seeds
1/2 teaspoon salt

Dressing:
1/4 cup rice vinegar
3 tablespoons dark sesame oil
2 tablespoons fresh lemon juice
1 teaspoon minced fresh ginger
1/2 teaspoon minced fresh garlic
1/2 teaspoon salt
1/8 teaspoon crushed red pepper flakes


Cook pasta according to pkg directions. Drain and rinse with cold water.

In a large bowl, combine pasta, chicken, red peppers, green onion, cilantro, mint, sesame seeds and salt.

In med. bowl, whisk together vinegar, sesame oil, lemon juice, ginger, garlic, salt and pepper fliakes.

Pour over pasta mixture and toss well.

Serve immediately or refrigerate until needed.
