Shish Taouk (Grilled Garlic Chicken)

1-1/2 pounds boneless chicken breast
4 cloves of garlic
Juice of 1 lemon
2 tablespoons of olive oil
1/2 teaspoon of ground allspice
1 teaspoon of salt


Peel and crush garlic with the salt. Stir into the lemon juice and olive oil.

Cut up chicken breasts into walnut-sized pieces. Sprinkle with allspice and cover with garlic and lemon marinade.

Marinate chicken for at least 1 hour (and up to 24 hours for maximum penetration), turning occasionally.

Thread chicken onto skewers, packing reasonably losely together, 4 or 5 pieces to a skewer.

Grill under a hot preheated grill for 2-3 minutes per side, turning 3 times.

When done, chicken should be crisp and dark brown and still succulent on the inside.

Eat while hot, serving it on the skewers, with hot pita bread, salad leaves, and quarter lemons ready to hand.

SHISH TAOUK (Chicken Kebab)

2 pounds of chicken (boneless, skinless breast meat)
2 tablespoons olive oil
2 cloves garlic, chopped
Juice from 1 lemon
1/4 teaspoon cumin
1/4 teaspoon each salt and pepper
1/2 teaspoon cayenne pepper


Mix oil, garlic, lemon juice, and spices in a large bowl.

Cut chicken into cubes, then add to the bowl, stirring to coat the chicken with marinade.

Cover and refrigerate for 3 hours, turning occasionally.

Put chicken onto skewers.

Grill over hot charcoal for 10-15 minutes,turning frequently and basting with marinade. Serve with bread and salad. Serves 4.
